Chicken Bacon Burgers

Ingredients:

2 cups cooked chicken, finely chopped
8 slices bacon, cooked crisp and crumbled
1/4 cup Ritz crackers, crushed (about 7)
2 eggs, lightly beaten
1 tbsp Worcestershire sauce
Dash of pepper
2 tbsp oil
4 slices American cheese
4 hamburger buns, partially split
4 Kosher dill pickle slices
4 lettuce leaves

Directions:

1. Mix chicken, bacon, Ritz cracker crumbs, eggs,
Worcestershire sauce and pepper until well blended.
Shape into 4 patties.

2. Heat oil in large skillet on medium heat 1 minute.
Add patties; cover. Cook 3 to 4 minutes on each side
or until cooked through, topping each burger with a slice
of cheese for the last minute of the cooking time.

3. Place burgers on bottom halves of buns;
top each with 1 pickle slice and 1 lettuce leaf.
Cover with tops of buns.

Serves: 4

Easy 4 Cheese Pizza Recipe


Ingredients:

1/4 cup olive oil
1 tbsp minced garlic
1/2 tsp sea salt
8 Roma tomatoes, sliced
2 (12 ") pre baked pizza crusts
8 oz shredded Mozzarella cheese
4 oz shredded Fontina cheese
10 fresh basil leaves, washed and dried
1/2 cup freshly grated Parmesan cheese
1/2 cup crumbled feta cheese

Directions:

1. Stir together olive oil, garlic and salt; toss with tomatoes and allow
to stand for 15 minutes. Preheat oven to 400 degrees F. (200 degrees C.).

2. Brush each pizza crust with some of the tomato marinade.
Sprinkle the pizzas evenly with Mozzarella and Fontina cheeses.
Arrange tomatoes over top then sprinkle with shredded basil,
Parmesan and feta cheese.

3. Bake in preheated oven until the cheese is bubbly and golden brown,
about 10 minutes.

Yield: 2 (12 inch) Pizzas
