Quick and Easy Jambalaya


Ingredients:

1 lge onion, diced
1 lge green bell pepper, diced
1 smoked sausage, cut in 1/4 slices
1 tbsp olive oil
4 cups chopped cooked chicken
3 cups uncooked long grain rice
2 cans French onion soup (10 1/2 oz), undiluted
1 can chicken broth (14 1/2 oz)
1 can beef broth (14 1/2 oz)
2 tsp Creole or Cajun seasoning

Directions:

1. Saute first three ingredients in hot oil in a Dutch oven
4 to 5 minutes or until sausage browns.
Stir in chicken and next 6 ingredients.

2. Bake, covered, at 350 degrees for 40 minutes,
stirring after 30 minutes. Garnish, if desired.
